back to chicken 101 and a recipe shared by an old friend . . . a fat free version of chicken marsala:
we've been eating this recipe for the last ten years. well, Kidlet and i have . . . the 9TS was more of a meat and potatoes/anything Italian kind of guy. i often made two meals for dinner.
but to start this one, it helps if you can go in the backyard and grab a couple/three Meyers lemons straight from the tree:
and actually, it is very late in the season. the lemons are a little soft still but very juicy.
then it is just a question of sauteing the chicken drenched in seasoned flour in olive oil until brown, removing it from the heat and adding crimini mushrooms, the lemon juice, parsley, chicken broth and of course Marsala wine. add the chicken back in and let it all simmer and plate over linguini. slurp. nothing like an old favorite.

Sounds and looks delicious but
I'm not sure it could be fat free.
I had ALL the skin and bones off my chicken last night. I made chicken salad with the chicken. UMMMM Good!
